Tâm Lê is a chef in Saigon. With her concept restaurant “Saigonita” she experiments an unusual fusion-cuisine, a mix of Vietnamese and Mexican recipes.
Restaurants like Saigonita help us to rethink about the origins of food, the idea of borders and typical food. Is the pasta really Italian, the tempura Japanese or ceviche Caribbean?
